CALIFLOWER SOUP FROM CAROL MCCCANDLESS ALSO BROCOLLI

 Ingredients:

• 1 medium head cauliflower (florets)
• 1 carrot (shredded)
• 1/4 cup chopped celery
• 2 1/2 cups water
• 2 tsp chicken bouillon (or 1 vegetable cube)
• 3 tbsp butter
• 3 tbsp all-purpose flour
• 3/4 tsp salt, 1/8 tsp pepper
• 2 cups 2% milk
• 1 cup shredded cheddar cheese
• 1/2-1 tsp hot sauce (optional)
Directions:
1️⃣ Boil cauliflower, carrot, celery, water, and bouillon in a Dutch oven. Simmer for 12-15 mins.
2️⃣ In a saucepan, melt butter. Stir in flour, salt, and pepper. Gradually whisk in milk. Boil 2 mins until thick.
3️⃣ Add cheese and stir until melted. Mix in hot sauce if desired.
4️⃣ Combine with the veggie mixture and serve warm.
