Egg Salad to George's and at home.


EGG SALAD AT HOME

Mixed eggs with mayo, smoked paprika, onion powder, black pepper, turmeric and a healthy squeeze of lemon.  
Very good.  Eggs were done in Instapot, then dropped into ice filled cold water and left in refrigerator for a good while.  That made them easy to peel.  
I still have trouble getting them out of the Instapot.  The grating does not help, they just fall off.  I guess I need a spoon or that wide tongs.


here was a real character at this picnic who stayed pretty much in the garage eating food. He was very skinny. He made no bones about coming for the food. He took a bowl of my egg salad and started raving about to everyone. Then Elizabeth told him I made it, and he called me over and said it was the best he had eaten. I felt pretty fine about that. He clearly ate a good bit of food everywhere. We had been wondering what we would do when we left to take our bowl with us. No problem. Scraped clean. I'm not certain that I can reproduce it because I kept tasting spices before I added them. It included turmeric, black pepper,  couple scoops of pickle relish, paprika (very common in recipes), fresh dill, a touch of key lime juice, eggs done in the Instapot, Heldman's mayo, a small amount of finely chopped white onion, one bunch of chopped scallions. The eggs were chunked, not forked to a creamy constancy. I stirred carefully. I did not measure much, not even the mayo/egg ratio. It was made the day before and stored in the refrigerator. I really think that brought out flavors, especially the dill.

Other recommended ingredients from a recipe

  • 2 tablespoons mustard seed
  • 1 tablespoon whole allspice
  • 2 teaspoons coriander seeds
  • 2 whole cloves
  • 1 teaspoon ground ginger
  • 1 teaspoon crushed red pepper flakes
  • 1 bay leaf, crumbled
  • 1 cinnamon stick (2 inches)
 I used a dry dill weed, some garlic, black pepper, in apple cider vinegar.  After a week in the refrigerator, they came out tasting great. 4/4/19 5/27/19 I'm going to try coriander with dill, black pepper in cider vinegar

I boiled fennel, dill weed, garlic, caraway seed and simmered for 5 minutes.
Added some black pepper late in the simmering.

The vinegar was mostly apple cider. Some white vinegar.

A week and a half later I gave them a taste. Really good. Very sour. The spices showed nicely. These cucumbers made for pickles are much crisper and better than the usual cukes. I'll want to make that again.

SALT FREE PICKLES

Ingredients

  • 3 1/2 lbs small un-waxed cucumbers or slice larger cucumbers into slices and spears.
  • 1/2 lb white onions - You can use the pearl onions or just cut standard onions into 1 inch chunks. 1 inch or less in diameter
  • 12 stalks fresh dill preferably with seed heads
  • 9 cloves garlic - peeled
  • 1 qt white vinegar
  • 3 cups water
  • 1 tbsp sugar
  • 3 tsp mixed pickling spice check to make sure salt-free – McCormick’s makes one that is salt free
  • 1 tbsp red chili flakes
  • 1 tbsp mustard seeds
  • 1 tbsp black peppercorns
  • 12 Grape leafs *Optional! Cutting the blossom end off the cucumber also works to keep the cucumbers crisp. this is the secret to keeping the pickles crispy
  • 3 Quart size jars with lids mason jars work best

FETTUCINI WITH HOME MADE SAUCE AND THE NO SALT FARMER'S CHEESE

Used the Miracle noodle fettucini.  Rinsed it very, very, very well.
Microwaved it for a couple minutes and poured off more water.


Then put on large dabs of the no salt Farmer's cheese and covered it liberally with homemade tomato sauce.  See post below.
