pancakes

1 cupalmond flour
¼ cupwater
2 eggs
1 tablespoonmaple syrup
¼ teaspoonsalt
1 teaspoonoil (or as needed)



DIRECTIONS:

  1. Whisk almond flour, water, eggs, maple syrup, and salt together in a bowl until batter is smooth.
  2. Heat oil in a skillet over medium heat; drop batter by large spoonfuls onto the griddle, and cook until bubbles form and the edges are dry, 3 to 5 minutes. Flip, and cook until browned on the other side, 3 to 5 minutes. Repeat with remaining batter.

Salvaging bland slow cooked veggies with alfredo

Earlier in the week I used Keith and Bern's slow cooker to make an onion, mushroom, carrot medley with just a hint of sausage.
I used herbs de provence and it was pretty bland.

The last two days I've had a soup made by adding the left over beef broth, and then the homemade veggie broth, a couple spoons of alfredo sauce, a good bit of paprika and some black pepper.  With a scissors I cut up the veggies right in the bowl.  Microwaved, this made a fine meal.

bread from almont butter

  • 16-oz. jar creamy almond butter
  • 6 eggs
  • 2 teaspoons baking power
  • ½ teaspoon salt
  • ¾ cup warm water



Pre-heat the oven to 325 degrees.
2. Mix the ingredients in a mixing bowl.
3. Pour the batter into a 9 x 5 greased bread pan.
4. Bake until firm. (In our oven, it took one hour.)


The almond butter is high in carbs

stuffed chicken breast

January 9= 2017 
Tried this but used other spices.  a bit of garlic, turmeric, thyme, pepper himilayan salt, regular onions, green pepper.


Ingredients

  • 4 boneless skinless chicken breasts
  • 2 tbsp. extra-virgin olive oil
  • kosher salt
  • Freshly ground black pepper
  • 1 tsp. Italian seasoning
  • 1 zucchini, halved and thinly sliced into half moons
  • 3 medium tomatoes, halved and thinly sliced into rounds
  • 2 yellow bell peppers, thinly sliced
  • 1/2 red onion, thinly sliced
  • 1 c. shredded mozzarella

Directions

  1. Preheat oven to 400º. Place chicken on a cutting board and make 5 slits in each breast, being careful not to cut through completely. Drizzle oil over chicken and season with salt, pepper, and Italian seasoning.
  2. Stuff each chicken breast with zucchini, tomato, bell pepper, and red onion.
  3. Sprinkle each chicken breast with mozzarella.
  4. Bake until chicken is cooked through and no longer pink, 25 minutes.
  5. Serve.

The eggs are just four in this recipe.  That made the bread less eggy.  I liked it better.  There was no need to fluff the whites, but I don't imagine it would hurt.  I did not.
I liked the result right out of the oven.  Tasty and more like bread than the other.


Almond Flour Bread Ingredients:


4 Pasture-raised eggs

2/3 cup of melted coconut oil

1 tsp pink salt (Himalayan or Redmond’s real salt)

1 cup of blanched almond flour

1 tsp of aluminum-free baking powder

Almond Flour Bread Instructions:


Step #1: Whisk together eggs, melted oil and salt

Step #2: Whisk in flour and baking powder

Step #3: Pour into greased mini loaf pan

Step #4: Put aluminum foil over the top of the pan (try to avoid it touching the bread mix)

Step #5: Bake at 350 degrees for 30 minutes

Servings:   1 loaf

Prep Time:  5-10 mins

Bake Time:  30 mins
