yam casseroles

ANNE'S SWEET POTATO CASSEROLE
2 (1 lb.) cans of sweet potatoes or yams, drained
1 (8 1/4 oz.) can crushed pineapple
1/2 c. melted butter
1/4 c. granulated sugar
1 tsp. cinnamon
1/4 c. chopped pecans
3/4 c. brown sugar, divided
In large mixing bowl, using mixer at medium speed, combine yams or sweet potatoes, crushed pineapple, butter, granulated sugar, cinnamon and 1/2 cup of brown sugar. When well mixed, whip on high speed for 1 minute.
Pour into buttered 2 quart casserole dish. Microwave on high for 8-10 minutes. Remove and sprinkle with remaining brown sugar and pecans. Return to oven and continue cooking on high about 5 minutes or until dish is hot and topping is melted.

sweet potato and pumpkin pineapple

Used up a can of yams.  Drained the juice.  I did not realize it was corn syrup
Added a can of prepared pumpkin
Mashed everything and blended in a good bit of ground nutmeg
Covered with a can of pineapple pieces
Baked until hot.  at 350 degrees 
Next time go easier on the numeg.
Spinkle on some pecans broken in pieces.
I like the mix of pumpkin and yam.
