zuchini lasagna from Marnie

Marnie Reid grill zucchini (enough to substitute for the pasta layers in a lasagna), make a salsa of your choice (I did spicy chipotle pepper salsa), layer salsa zucchini grilled onions black beans cheese salsa zucchini grilled peppers sauteed spinach (kale, chard) cheese salsa, zucchini and top with cheese and bake 30 minutes....add feta, eggplant, mushrooms, ??? whatever you like in your Mexican lasagna. Enjoy.
