chana dal soup

First try.  I did not boil the beans first and then add ingredients.  So, perhaps the spices were overcooked.  I also shortened the cooking time from two hours to one hour and I think that was a mistake for a very creamy soup. I  used sour cream instead of yogurt.  That worked fine.  I used turmeric too. I used my homemade veggie broth instead of water and 5 cloves of garlic.  I did not have red pepper or chives.   I can see how this would be good with red pepper, but on top of the garlic and onion I think the chives would just be decoration.
Very tasty.  Elizabeth liked it.  I'd like it more with a bit of ginger and I add that to my portion. 
I do think soaking was important.  I rarely soak chana dal, but I will from now one.  The baking soda helps destroy any lingering pesticides.  

Ingredients

2 c dry chana dal, soaked FOR AT LEAST SEVEN HOURS IN SIX CUPS OF WATER AND A TEASPOON OF BAKING SODA, and THEN drained


INGREDIENTS
Water to cover chana dal by about 2 inches, plus more if needed 

1 tsp baking soda, for soaking 

3 cloves garlic 

1/2 small onion, quartered 

1-3 tsp yellow curry powder, or to taste 

High mineral sea salt to taste 

1/4 tsp or more black pepper 

2 tsp high quality olive oil 

2 Tbs fat free Greek yogurt 

Fresh snipped chives (optional)

Sweet pepper rings (optional)

Instructions

  1. The night before you want to make this, sort and rinse your chana dal. Put in a pot with 6 cups of water and 1 tsp of baking soda.
  2. After soaking at least 7 hours, drain the soaking water. Add enough fresh water to cover the chana dal by 2 inches or so.
  3. Add garlic and onion and bring just to a boil.
  4. Simmer on low heat for 2 hours or until the chana dal is soft and mushy.
  5. Add remaining seasonings, olive oil and yogurt.
  6. Using an immersion blender, carefully blend until smooth.
  7. Check for seasoning and adjust to your taste.
  8. Serve garnished with a dollop of Greek yogurt, fresh chives and peppers if desired

Notes

Be sure to plan ahead for soaking and long, slow cooking! But other than that this is a super easy recipe and worth the wait.

MAIN INGREDIENTS
4 cups mashed sweet potato (canned sweet potato works!)
1 cup sugar
2 eggs
1/2 cup milk
1/2 tsp salt
1/3 stick melted butter
1 tsp vanilla


Mix well and pour into buttered 9x13 dish.

TOPPING INGREDIENTS
1 cup brown sugar
1/2 cup flour
1/3 cup melted butter
1 cup chopped pecans

*I usually increase the topping ingredients---almost double it for the recipe

Crumble topping evenly over potato mixture. Bake uncovered at 350 for 35-45 minutes.

Instructions
Crust:
  1. Preheat the oven to 325F.
  2. In a food processor, combine the almond flour, sweetener, and salt. Pulse a few times to combine. Scatter the butter pieces over top and pulse until mixture resembles coarse crumbs.
  3. Press into the bottom of a 9x9 inch pan and bake 12 minutes or until the edges are just turning golden.
Pecan Pie Filling:
  1. In a medium saucepan over low heat, melt the butter. Stir in the powdered sweetener and Yacon syrup and whisk until well combined. Remove from heat.
  2. Whisk in the vanilla extract and cream. Add the eggs and salt and whisk until fully incorporated. 
  3. Scatter the pecans and chopped chocolate over the crust and pour the filling overtop. Bake 20 to 25 minutes, until the filling is mostly set (if you want them gooey, make sure the middle still has a little jiggle to it when the pan is shaken).
  4. Remove and let cool at least 30 minutes before cutting into bars.

Read a bit and did the squash in the ourdoor roaster.  It was very good.  I filled the cavity with apple and will do that again.  I coated the squash with coconut oil and love the taste when it was done.

Polish cucumber salad

ngredients:
3 medium cucumbers, peeled and thinly sliced
1 1⁄2 teaspoons salt
1⁄8 teaspoon pepper
1 tablespoon dill
1 cup sour cream
1 tablespoon white vinegar (optional)
Directions:
Place cucumbers in a medium bowl.
Add salt.
Mix lightly until salt adheres evenly to cucumbers.
Cover and refrigerate for one hour.
Drain juice from limp cucumbers.
In a small bowl, combine the remainder of the ingredients.
Add to cucumbers, mixing gently.
Cover and refrigerate until ready to serve.

Latin Dance

For our third Valentine outing we went to the Inverness Courthouse to see a Latin band that has been very popular in Tampa for a long while.

It was a mixed experience.  They have the audience sit at huge tables decorated for Valentines.  They have food provided downstairs before the show.  Practically no one brings the food upstairs, so the tables are totally useless except they use up space.  We were very crowded at ours.  Half the table has to turn they chairs around in awkward positions and we could hardly walk between the final arrangement.  The guy next to me could not keep from bumping his knees on mine, drumming on the table, and singing along.
The second half we went to the far back and sat in chairs there where the absence of a table made some room for dancing.  No annoying guy.
I mentioned to one of the volunteers that there was never much that a diabetic could eat in the food.  This time I could eat a meatball or two.  The rest was pasta, two kinds.
The desserts are always sugary cookies.  Fruit of bites of cheese would be a much better pick for this aging crowd of people.  25% of people over the age of 60 have diabetes and should not be eating sugary cookies created in carb loaded recipes.

The band was very good.  Much of the music sounded the same to us in spite of the attempt to give some overview of changes over time.  Perhaps that is our lack of an educated ear.  However, I do know the sound of "bolero" and their sound is not what I expect if something is called "bolero."

Well, we had a fun time nonetheless.  Elizabeth got to see some real Cuban motion and went up to learn a bit of it from the woman dancing.  That was helpful as that is her goal.  Costa Rica should help.

I liked the horns as always, but I thought the trombone a bit off on some of the notes.  And the trumpet was just a bit too much in my face with few smooth sounds.  Perhaps that is Latin trumpet.

Ingredients

  • 1.5 - 2 lbs. boneless skinless chicken thighs
  • ¼ tsp. salt
  • ¼ tsp. pepper
  • ¼ tsp. onion powder
  • 1 Tbsp. chili powder
  • 2 (15-oz.) cans pinto beans, drained
  • 1 (15-oz.) can petite diced tomatoes
  • 1 tsp. minced garlic
  • 1 cup diced white onion
  • 1 Tbsp. minced jalapeno, use more if you like really spicy
  • 1 (32-oz.) box chicken broth
  • 1 (8-oz.) box cream cheese, cut into cubes
  • ⅛ cup minced cilantro

Slow cooker size:

  • 6-quart or larger


  1. Add the chicken, salt, pepper, onion powder, chili powder, pinto beans, tomatoes, garlic, onion, jalapeno, and chicken broth to the slow cooker.
  2. Cover and cook on HIGH for 5 hours, or low for 8.
  3. Shred the chicken with 2 forks, I do this right in the slow cooker.
  4. Add the cubed cream cheese into the soup. Cover for and additional 20 minutes. Stir the cream cheese into the soup. Some cream cheese chunks may remain, you can help them dissolve by pushing them up to the side of the slow cooker with the back of a spoon, and continued stirring. Stir in cilantro and serve.

I tried this bread recipe today
INGREDIENTS:

½ c. almond flour

¼ c. golden flax meal

¼ c. plain whey protein powder

1 tsp. baking powder

3 T. cream cheese, softened

2 large eggs, beaten

1 c. grated Monterrey Jack cheese

½ c. grated Mozzarella cheese

1 tsp. cider vinegar

1 T. heavy cream

1 T. water

1 tsp. yeast dissolved in 1 T. warm water (optional, for flavor only)

Spices or seeds of your choosing sprinkled on top before baking.  I often use this mixture:  https://buttoni.wordpress.com/2012/10/09/peggys-8-seed-spice-blend/

DIRECTIONS:  Preheat oven to 350º.  Soften cream cheese in medium mixing bowl in microwave.  Beat in the eggs, cream, water, vinegar, both cheeses and dissolved yeast (if using).  Measure and add in all the dry ingredients and stir well with a rubber spatula. Line a sheet pan either with parchment paper or silicone sheet.  Scrap the batter onto the prepared pan, spreading it as evenly as possible with the spatula into a rectangle that is roughly 10″x13″.  Batter will be about ¼” thick.  Sprinkle on spices if using any.  Pop bread into 350º oven and bake for about 20 minutes or until done to the touch in the center and lightly browned around the edges.  Cool a few minutes and cut evenly into 9 “slices.  When totally cool, store in plastic bag in your refrigerator.

I think I underbaked it a bit.  I was looking at 20 minutes, my pan at 30 minutes.  Still it was good.
I did not use protein whey but added more flour.  I used almond milk.  I did use yeast for flavoring but only because I had it.  I probably would not do that again.  I topped it with sliced almonds.
It was tasty, but not my favorite.
